B&O American Brasserie, where American Dining meets the American Rail
B&O is a special combination of style and substance, a restaurant with a sum that is far greater than its parts, worthy of the legendary Baltimore & Ohio Railway's headquarters, where we make our home adjacent to Hotel Monaco Baltimore.
Step inside and you'll notice what we've done with the place. Contemporary design elements are set against a backdrop of time-honored architectural features. Using the building's original Beaux-Arts architecture, we brought back touches from old B&O dining cars like The York and integrated them into the fundamentals like the chairs and table lamps.
Other touches throughout the 4500-square-foot space reference historic details like the B&O railway carriages and the grand terminals that housed the mighty locomotives.
Modern American Cuisine
It's most certain though, that train passengers from the early 1900s did not eat nearly as well as patrons of the latter-day B&O American Brasserie.
You see, it's not unlikely to see Executive Chef Bradley Willits carefully sifting through produce at nearby farmers' markets Sunday mornings while shopping for the upcoming week's menus. A native New Englander, Chef Dunklin has created breakfast, brunch, lunch and dinner menus that could be characterized as delicious tributes to dishes prepared in the classic brasserie fashion. Buttermilk Battered Chicken, 24-hour Vande Rose Pot Roast, Hanger Steak and Ricotta Gnocchi, for example, fill the big plates, while Meatball and Smoked Shrimp pizzas, to name two, make their way out of the brick oven. The ridiculous dessert menu completes the fare.
Specialty Cocktails, Crafted Beers, & an Exceptional Wine List
And this being Baltimore, it's only reasonable that B&O pay loving attention to the liquid side of things as well. Signature cocktails like the Cardinal Sin and Hobo's Cola & Bourbon are served alongside classics like the Old Havana and the B&O Manhattan. Several beers are on tap and a wine list - many with familiar regional names - round out the offerings.
On top of it all, B&O remains steadfast in its commitment to the world we live in. Among its eco-friendly and sustainable practices, you'll find our dishes are prepared with as many local Baltimore sourced ingredients as possible. Plus, we recycle and even offer Natura® Water, produced from the in-house filtration system.
